Hi ceegee, since de the "wind" is making the waves travel from right to left of the screen, I think that you should also try to apply a wind to the particles in the same direction. :-)

looking good man. Im playing with hot too now. But Im not so good in vex/vop. Plese do you thing that you could upload some scene with your ocean shader? I made one, but foam is based on height but curvature of choppines is much more better.Your setup will help me a lot.

I have little question. I dont understand when I use HOT based on SOP or SHOP. SHOP displace I use when I need really large area of sea? If yes, how I could separate choppy faces for particles. Or how work workflow, combination displace and SOP?
