Probable fluids?

I'm just wondering, are there any probabilistic particle or fluid simulation algorithms or solvers out there? People who deal with many many particles (chemists, physicists) seem to have some nifty probabilistic ways of dealing with this. Statistical mechanics, etc.

I don't know much about how simulations work under the hood but just like those guys, we use many many particles as well.

Does anybody know more?
