set N value

I'm not quite sure I understood what you wanted from this but I made a quick setup that might help you out.
Simple breakdown is using the "poly frame" sop to create Normals going along your poly lines, this is done by inputting the N attribute as the recipient of the tangent data the node makes. Then secondly I just modify the N in a wrangle making it flat by setting N.y to 0. Like I mentioned I'm not sure if you were looking for the flattening part or if you just wanted the normals going along the poly line, either way this should solve it.
