Yeah, I agree - except there are often some operations you might want to run after fluid surface is done - like the Peak and Smooth trick to get more cusped shapes. You can fight the bulgy look by Peaking the surface inwards and pre- and/or post- smoothing. Its makes for that "shattered" cusped stringy look quite well sometimes. I only know some details about the RF render kit, but AFAIK Houdini/Mantra can do the same and much more and with more flexibility. Even the peak/smooth trick can be get using displacements and Metaballs to Poligons procedural, all at render time.
